What is
an Alcohol-Free Beer?
According to the law, beer is a beverage obtained by the alcoholic fermentation of a wort prepared from cereal malts, sugars, hops, and drinking water.
Our beers meet this definition because they are brewed in exactly the same way as traditional beers.
To produce alcohol-free beer, we have developed a controlled fermentation process, using specific yeasts and malts.
Another small difference: for alcoholic beer, a bit of sugar is added before sealing the bottle or keg, and some alcohol is generated from the transformation of this sugar by the yeasts.
At Edmond, no sugar is added: therefore, there is no “bottle conditioning” stage, and to ensure a stable and healthy product, we pasteurize our beers “in tunnel,” which allows us to preserve all the flavors of our beers.
In alcoholic beer, alcohol is the element that allows for the healthy preservation of the product. For us, pasteurization plays that role (Thank you, Louis Pasteur!).

In France, a beer can be labeled as alcohol-free if it does not exceed 1.2% alcohol by volume. Ours contains between 0.16% and 0.31% alcohol (which is much less than a kombucha, for example, whose alcohol content can range from 0.5% to 2.5% when made at home!).
Some choose to dealcoholize their beer, but that’s not our approach, as this process tends to make the beverage (in our opinion) much less flavorful and often requires the addition of artificial flavors. We take pride in offering beers with no added flavors or sugars!

Edmond is the cheerful weightlifter featured on all our labels. He evokes the imagery of circus “freaks” who were viewed as curiosities… because to be honest, we were looked at as a bit odd ourselves when we started talking about alcohol-free beers in 2017. Edmond also embodies the desire to break stereotypes, to assert that 0% beer isn’t just a “girly” drink, and that everyone can find something to enjoy. We wanted to shatter the contrast between prejudice and the amazing product we are convinced we offer.
